4 spray(s) Cooking spray
1 cup(s) Self-rising flour
0.5 cup(s) Powdered sugar (confectioner's) divided
1 tsp Ground cinnamon
1 cup(s) Plain fat free Greek yogurt divided
1 tsp Vanilla extract
1 cup(s) Fresh apple(s) unpeeled, finely chopped
1 Tbsp Rainbow sprinkles

Steps:

  • Preheat the oven to 375°F. Line a large sheet pan with parchment paper.
  • In a medium bowl, whisk together the flour, 2 tbsp sugar, and cinnamon. Add ¾ cup plus 2 tbsp yogurt and vanilla; stir well with a wooden spoon until just combined and then keep mixing the dough in the bowl with your hands until smooth (about 2 minutes of kneading). Add the apple and knead gently until combined.
  • Divide the dough into 8 equal pieces, rolling each into a ball. Arrange the balls on the prepared pan and flatten each into a 3-in circle (it's OK if they're irregular). Bake until golden brown on top and bottom, 20 to 22 minutes. Remove the fritters to a wire rack and cool for 10 minutes.
  • Meanwhile, in a small bowl, stir together the remaining 6 tbsp sugar and 2 tbsp yogurt until smooth. Spread the glaze over the fritters; top evenly with the sprinkles.
  • Serving size: 1 fritter
