1 pound beef (sirloin),
2 Tbsp vegetable oil
1 carrot cut into matchsticks
1 onion cut into wide strips
2 Thai chili peppers, minced
2 Tbsp fresh ginger, minced
2 cloves garlic, minced
Marinade:
2 Tbsp soy sauce
1 Tbsp cooking wine
1 tsp sugar
2 Tbsp ginger juice
Sauce:
1 Tbsp wine
2 Tbsp light soy sauce
1 Tbsp vinegar
4 Tbsp sugar (can substitute brown sugar or honey, if desired)
1/2 tsp sesame oil
2 Tbsp water
1 1/2 Tbsp corn starch
Asian chili sauce to taste

Steps:

  • Cut beef into thin strips, cutting along the grain. (The meat is easier to cut if it is partially frozen). Mix marinade ingredients. Add to beef and marinate unrefrigerated for 30 minutes. Mix the sauce ingredients and set aside. Heat wok on high, once hot add 1 Tbsp of oil. Add onions to hot oil and stir fry for one minute. Add garlic, ginger, and pepper and continue to fry unti onions become tender and you can smell the garlic. Remove onion mixture and set aside. Wipe wok clean. Return wok to high heat, add oil, and stir fry beef in batches. Return cooked beef to wok, add onion mixture and carrots and stir until well combined. Add sauce, bring to a boil and cook until thickened. Remove from heat and serve with sticky rice and stir fried vegetables.
