Ghost Meringues image

Number Of Ingredients 5

3 Egg Whites
1 cup Caster (Baker's) Sugar
1/4 teaspoon Cream of Tartor
1/2 tablespoon Fresh Squeezed Lemon Juice
1 bottle Black Food Coloring

Steps:

  • Preheat oven to 225°
  • Line two baking sheets with parchment paper
  • Put egg whites in stand mixer and start whipping medium high speed
  • Add cream of tartar & lemon juice
  • Next add sugar one tablespoon at a time
  • Whisk until thick and glossy; should stand up on it's own with very stiff high peaks
  • Scoop mixture into piping bag and pipe ghost shapes onto parchment
  • Bake for ~ 1 hour and 15 minutes
  • Turn off oven, open door and let them cool inside for 2-3hrs (or over night)
  • Use black food coloring with a paint brush to paint on eyes nose and mouth
