German Apple Pancake (Apfelfannkuchen) image

2 giant pancakes. Slice each in quarters and serve like a warm pastry. Substitute other fruits for the apples.

4 eggs
3/4 cup all-purpose flour
3/4 cup milk
1/2 teaspoon salt
1/4 cup butter
2 medium apples
1/4 cup sugar
1/4 teaspoon ground cinnamon

Steps:

  • Peel and thinly slice apples. Set aside.
  • Beat eggs and flour with a whisk; beat in milk and salt. (Let batter rest while oven pre-heats.).
  • Heat oven to 400 degrees.
  • Place 2 round cake pans (9") in oven.
  • When oven reaches 400 degrees and pans are hot, remove pans from oven and place 2 T butter in each pan. Rotate pans until butter has melted and coats bottom and sides of pans.
  • Arrange half the apples in each pan. Divide batter evenly between pans.
  • Mix sugar and cinnamon; sprinkle 2T sugar mixture over batter in each pan.
  • Bake uncovered until puffed and golden brown, 20 - 25 minutes.
