German Apple pancake image

A quick microwave recipe for the classic German apple pancake.Source: Unknown but I think it's from a Costco cookbook

Number Of Ingredients 10

- apple topping:
- 1/4 cup butter or margarine
- 2 cups peeled and thinly sliced apples
- 1/4 cup sugar
- 1/2 teaspoon ground cinnamon
- pancake batter:
- 1 cup buttermilk complete pancake mix
- 3/4 cup water
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon

Steps:

  • to prepare the topping, place butter in a 9 inch microwave safe pie pan. Microwave on high for 45 to 60 seconds or until butter is melted. Stir in apples, sugar and cinnamon. Cover and microwave on high for 3 to 4 minutes, or until apples are tender. To make the batter, place pancake mix, water, vanilla and cinnamon in medium bowl and blend with a wire whisk. Pour evenly over the cooked apples.
  • Microwave uncovered on high for 3 to 5 minutes or until a toothpick inserted in the center comes out clean. Let stand for 3 to 5 minutes, then invert onto a serving plate. Optional: sprinkle with additional cinnamon and powdered sugar. Makes 6 to 8 servings
  • Tip: to use a conventional oven, preheat to 350°. Prepare Apple topping as directed. Bake, uncovered, for 10 minutes or until apples are tender prepare pancake batter and pour evenly over the cooked apples. Bake, uncovered, for 13 to 15 minutes or until a toothpick inserted into center comes out clean. Cooking the Costco way
