How to make General Robert E Lee Orange Lemon Cake

Number Of Ingredients 10

2 Cups Of Sifted Cake Flour
1 1/2 Teaspoons Of Baking Powder
1/2 Teaspoon of Cream of Tartar
10 Eggs Separated
2 Cups of Sugar
1/2 Cup Of Vegetable Oil
2 Tablespoons Grated Lemon Rind
2 Tablespoons Lemon Juice
Pinch Of Salt
Orange Lemon Frosting

Steps:

  • Combine first three ingredients and sift together 6 times. And set aside
  • Combine Egg Yolks and Sugar in a large mixing bowl and beat at high speed with a electric mixer until thick and lemon colored. Reduce speed to medium and gradually add in vegetable oil. Add flour mixture and mix until well blended. Stir in the lemon rind and juice.
  • Beat egg whites and salt until stiff peaks form. Fold into your batter. Pour your batter into 4 wax paper lined and greased 8-inch round cake pans.The new baking paper that has parchment paper on one side and tinfoil on the other side is the best baking paper to use when baking cakes. You can find this new baking paper in most supermarkets. Give it a try and see what you think.
  • Bake at 325 degrees for 20-25 minutes or until cake springs back when lightly touched. Cool in pans 10 minutes. Loosen your cake from the sides of the pan with a knife. Remove cake layers from pans and peel off wax paper. Cool your layers completely.
