GARY RHODES BREAD AND BUTTER PUDDING image

12 slices white bread, decrusted (1-2 days old)
50g butter
175g caster sugar
8 egg yolks
300g double cream
300g half-fat milk
vanilla pod or essence
sultanas and raisins

Steps:

  • 1. butter bread slices, place in layers into buttered dish. In between layers, put sultanas and raisins. (not on top layer, as they tend to burn.) 2. Beat eggs and sugar together, boil milk and cream with vanilla. Pour cream mixture over eggs, beating all the time. This is the custard. 3. Preheat oven to 180°C, pour custard over bread layers, let soak for 20 minutes for bread to take up the flavors. Bake dish for 20-30 minutes, until custard thickens slightly. 4. Sprinkle caster sugar over it, put under the grill to caramelise sugar.
