- Cut unpeeled potatoes into chunks. In microwave casserole dish, combine potatoes,garlic, oil, salt and pepper. Cook covered on high 14-18 minutes or until potatoes are tender, stirring twice. Stir in lemon peel and chives. Let stand covered 5 minutes.
