GARLIC PARMESAN PORK CHOPS with PINE NUTS image

This is my own variation of Mr. Food's recipe. I've always liked my pork chops cooked a bit longer than most chefs do, and I've always had excellent results doing it my way. So here is my version with a few tweaks!

4 - 1/2-inch thick boneless pork chops
1/2 teaspoon(s) salt
1/4 teaspoon(s) black pepper
1 1/2 cup(s) all purpose flour
1 tablespoon(s) italian seasoning
2 - eggs
1 cup(s) grated parmesan cheese, divided
1 cup(s) panko bread crumbs
1/4 cup(s) butter, divided
1 clove(s) garlic, minced
3/4 cup(s) heavy cream
1/3 cup(s) pine nuts (pignolias)

Steps:

  • Sprinkle the pork chops evenly with salt and pepper.
  • Place flour in a small shallow bowl with Italian seasoning; mix together.
  • Break eggs into a second small shallow bowl and beat lightly.
  • In another bowl, mix together the panko bread crumbs and half the Parmesan cheese.
  • Dip both sides of each pork chop in first the flour, then the egg, and then the bread crumbs. Place chops on a sprayed, rimmed baking sheet.
  • Bake pork chops in a preheated 375-degree oven for 40-50 minutes, turning once halfway through baking time.
  • Melt 1 Tbsp. butter in a saucepan over medium-high heat; add garlic and saute for 2 to 3 minutes. Stir in cream and remaining Parmesan; reduce heat to low and simmer 3 to 4 minutes (DO NOT BOIL). Whisk in the remaining butter until melted.
  • Serve the sauce over hot pork chops. May garnish with parsley.
