Garlic Butter Scallops image

Threw this together one day for lunch. Yum

Number Of Ingredients 8

2 Tbsp vegetable oil
1 lb scallops
6 clove garlic minced
6 Tbsp cold butter cut into slices
salt
2 Tbsp fresh parsley chopped
zest and juice of 1 lemon
microgreens for serving

Steps:

  • 1. Get a pan hot and add the oil. Season the scallops with salt and sear in the pan for 1 minute each side. Add the garlic and toss the pan around a bit.
  • 2. Add the butter one slice at a time. Toss and coat the scallps until all butter is melted. Turn off the heat and add the parsley and lemon juice.
  • 3. Remove the scallops with a slotted spoon and serve on a bed of micro greens and top with some of the butter sauce
