Fruit Cocktail Cake image

This is a very moist and rich cake. My children loved this cake when they were younger, and do to this day. Though we were not big on Fruit Cocktail, it makes a Fantastic cake. Much better than Fruit Cake. With a broiled Icing. I hope you enjoy this recipe.

Number Of Ingredients 11

2 1/2 cup(s) cake flour
1 1/2 teaspoon(s) baking soda
1 teaspoon(s) salt
1 teaspoon(s) cinnamon
1/2 teaspoon(s) cloves. ground
1/4 teaspoon(s) allspice, ground
1/4 teaspoon(s) baking powder
1/2 cup(s) butter flavor shortening (crisco)
2 cup(s) sugar
2 large eggs
1 can(s) fruit cocktail, in syrup

Steps:

  • Preheat oven @ 350* - Lightly Grease and Flour 9 inch cake pan.
  • Combine the first 7 ingredients in medium mixing bowl. Cream Crisco separate in large bowl for 30 seconds, add Sugar and cream, add eggs one at a time, beat 1 minute after each egg.
  • Add dry ingredients alternately beat on low after each addition. Stir in Fruit Cocktail till well combined. Pour into pan, bake 45 minutes or till knife inserted comes out clean.
  • Icing: Sprinkle Brown Sugar on top and cut pats of Butter and place on top of Brown Sugar. Place pan into broiler till it bubbles, let cool on cake rack for 10 minutes. Best served warm.....Enjoy
