Fruit and Yogurt Parfait image

I based this on a parfait sold in our cafe at work. The yogurt is made rich and creamy by the addition of pudding mix! You can use whatever fruit you like, I like to use blueberries but whatever is in season will work.

Yield 4 parfaits, 4 serving(s)

Number Of Ingredients 4

32 ounces plain low-fat yogurt (I use Stonyfield Farm to avoid rGBH)
1 (1 1/2 ounce) package vanilla instant pudding mix
2 cups blueberries (fresh or frozen)
1 cup low-fat granola

Steps:

  • In a bowl, mix yogurt and pudding mix with a wisk untill combined and there are no lumps.
  • Chill for a couple hours or overnight.
  • In each of 4 parfait glasses, layer a half cup of yogurt followed by a quarter cup of blueberries. Repeat layers. Top each glass with a quarter cup of granola.
  • Enjoy!
  • Note - you may use any fruit or a mixture of fruits. You could use any flavor pudding mix you like to flavor your yogurt. I have also used lemon.
