From Scratch ~ Ooey Gooey Butter Cake image

Recipe and picture by Alicia Ross of the Kitchen Scoop appeared in the Reading Eagle on December 31, 2014. Most recipes for this type of cake use a cake mix, and this is a from scratch version.

2 c flour
1 c sugar
1 Tbsp baking powder
1 tsp salt
1/2 c butter, softened
3 eggs, divided use
8 oz cream cheese, softened
3 1/4 c powdered sugar, sifted
2 tsp vanilla extract

Steps:

  • 1. Pre-heat oven to 350. Butter and flour a 9x13 baking pan and set aside.
  • 2. Using an electric mixer, blend the flour, sugar, baking powder, salt, butter and 1 egg on low speed until it resembles coarse meal. Press mixture into prepared pan.
  • 3. In another bowl, beat the cream cheese, powdered sugar, vanilla and remaining 2 eggs for 3 minutes or until light and fluffy. Pour over cake mixture.
  • 4. Bake for 35 to 45 minutes or until cake is golden brown along the edges.
  • 5. Cool at least 30 minutes before cutting and serving.
