Steps:
- Preheat Oven to 350 degrees
- Heat 1 1/2 TBLS oil in ovenproof pan over a med-high heat
- Saute any combination of vegetables until almost done (5-10 minutes depending on the vegetable)
- While Vegetables are sauteing, beat eggs and milk together until just combined. Add salt and pepper.
- Arrange Vegetables evenly around the pan. Ensure sides and bottom of pan have a light coat of oil from saute. If needed, brush some around so eggs will not stick.
- Pour egg mixture over vegetables. Sprinkle meat evenly into eggs. Sprinkle cheese on top. Cook over med-high heat for 5-7 minutes, just until eggs are set around the perimeter and start to pull away from sides.
- Turn off stove and put pan in the oven for 16-18 minutes.
- Can be eaten warm or room temperature. Fabulous the next day, too.
