YAMS, THANKSGIVING image

Number Of Ingredients 9

3 lbs. yams
1 1/2 c. onion, finely chopped
6 inch piece fresh ginger root, chopped or grated
3 garlic cloves, minced
Apples, Granny Smith or Gala, peeled, cored, diced
Cooking oil or butter
Salt and pepper
1 - 1 1/2 c. coconut milk
Maple syrup

Steps:

  • Scrub but don't peel the yams. Cut a slit in the top of each yam with a knife. Heat the oven at 375 degrees F (there is no need to preheat), and place the yams directly on the center rack. Cover the rack below with aluminum foil to catch the yam's syrup, which will drip during baking. Let the yams bake about 1 1/2 hours or until they are soft. A knife or fork should go into them easily. Cool slightly, peel and cube. Reserve. Meanwhile, heat a skillet over medium heat. Add butter or oil. Add onions, and begin cooking. Add ginger and garlic. Cook onions until they are a nice golden color. Rough mash and remove to a bowl. Add butter to skillet and diced apples. Sauté until tender. Add a bit of Calavados and let reduce. Rough mash apples and add to onions. Return yams to skillet. Add coconut milk and begin to reduce. (you want the coconut milk to be almost dry by the end.) Add apple and onion mixture during this process. Heat through and mash all together. Season yams with salt, pepper, a hint of nutmeg, butter and sweeten with a bit of maple syrup. Reheat if necessary and serve.
