Frito Corn Salad image

This is my mother-in-law Janice Williams' recipe.

Number Of Ingredients 6

3 can(s) whole kernel corn, drained
1/4 c green bell pepper, finely chopped
4 green onions, finely minced
1 c mayonnaise
1 1/4 c mexican blend cheese, shredded
1 (10 oz.) bag(s) frito chili corn chips

Steps:

  • 1. Mix all ingredients except corn chips. Cover and chill for at least an hour to overnight. (Overnight is best as the flavors will blend better.)
  • 2. Add chip when ready to serve. Stir to mix.
  • 3. You can double the recipe but just need the one bag of chips.
