Frisee Salad with Pears and Dried Cherries image

Frisee (another name for curly endive) is a salad green with crisp feathery leaves that range in color from light green to yellow white. It has a slightly bitter taste that goes especially well with sweet dressings.

Number Of Ingredients 9

2 tablespoons mango chutney or apricot jam
2 tablespoons red-wine vinegar
2 teaspoons Dijon mustard
1/4 teaspoon curry powder
2 tablespoons olive oil
Coarse salt and ground pepper
1 bunch (about 10 ounces) frisee, washed and dried
2 firm, ripe Bosc pears (about 1 pound total), halved, cored, and cut into 3/4-inch-wide wedges
1/3 cup dried cherries

Steps:

  • In a large bowl, mash chutney with the back of a spoon to break up any large pieces of fruit. Whisk in vinegar, mustard, curry powder, and oil. Season with salt and pepper.
  • Add frisee, pears, and dried cherries. Toss to combine, and serve immediately.
