Fried Rice Salad image

When we order chinese take out, we always end up with tons of leftover steamed white rice. This is a great way to use it up! Chill time is not included in the prep time.

Number Of Ingredients 12

1 tablespoon(s) plus 1 teaspoon vegetable oil
1 cup(s) celery, thinly sliced
1 cup(s) onion, minced
1 small green bell pepper, cut into julienne strips
1/2 teaspoon(s) sugar
1/2 teaspoon(s) salt
1/4 - 1/2 teaspoon(s) pepper
4 cup(s) cooked long grain rice
1 tablespoon(s) soy sauce
1 medium tomato, diced
1 tablespoon(s) fresh parsley, minced
3 tablespoon(s) green onion tops, chopped

Steps:

  • Heat oil in a large skillet or wok over medium-high heat; add celery and the next 5 ingredients, and stir-fry for 3 minutes.
  • Add the rice, and stir fry for 2 minutes. Remove from the heat and stir in the soy sauce.
  • Spoon the rice mixture into a serving bowl; cover and chill at least 3 hours. Top with tomato, parsley, and green onions just before serving.
