1-1/2 cups sliced fresh or frozen okra, thawed
3 tablespoons buttermilk
2 tablespoons all-purpose flour
2 tablespoons cornmeal
1/4 teaspoon salt
1/4 teaspoon garlic herb seasoning blend
1/8 teaspoon pepper
Oil for deep-fat frying
Additional salt and pepper, optional

Steps:

  • Pat okra dry with paper towels. Place buttermilk in a shallow bowl. In another shallow bowl, combine the flour, cornmeal, salt, seasoning blend and pepper. Dip okra in buttermilk, then roll in cornmeal mixture., In an electric skillet or deep-fat fryer, heat 1 in. of oil to 375°. Fry okra, a few pieces at a time, for 1-1/2 to 2-1/2 minutes on each side or until golden brown. Drain on paper towels. Season with additional salt and pepper if desired.

  • In a small bowl, soak okra in egg for 5 to 10 minutes. In a medium bowl, combine cornmeal, salt, and pepper.

1 large egg
½ pound okra pods, cut into 1/2-inch slices
1 cup cornmeal
¼ cup all-purpose flour
cooking spray
salt to taste

Steps:

  • Place egg in a shallow dish and beat; gently stir in sliced okra.
  • Combine cornmeal and flour in a gallon-size resealable plastic bag. Drop 5 slices of okra in the cornmeal mixture, zip the bag, and shake. Remove breaded okra to a plate. Repeat with remaining okra slices.
  • Preheat air fryer to 400 degrees F (200 degrees C). Place 1/2 the breaded okra slices in the basket of the air fryer and spray with cooking spray. Cook 4 minutes. Shake the basket and mist okra with cooking spray again. Cook an additional 4 minutes. Shake the basket one last time and cook for 2 minutes. Remove the okra from the basket and salt to taste.
  • Repeat with remaining okra slices.

Fried okra is a staple in Texas and the south, and everyone has their own way to make it. The crust can be flour, cornmeal, or a combination of both; my grandmother used cornmeal, my mother uses mostly seasoned flour, my wife uses both at the same time. They are all good to me. In fact, I can't recall ever meeting a plate or bowl of fried okra that I didn't like. It is easy to make.

1 bag frozen cut-up okra (or equal amount of fresh okra cut up)
1 -2 cup flour
1 -2 cup cornmeal
salt and pepper
5 eggs, beaten

Steps:

  • Heat about 1/4-inch of cooking oil in a frying pan.
  • Season flour/cornmeal with salt and pepper to taste.
  • NOTE: Flour and cornmeal may be mixed together or applied separately, and some recipes use only one or the other.
  • IF FLOUR AND CORNMEAL ARE MIXED: dredge okra in beaten eggs, then dredge in flour-cornmeal mixture.

1 lb fresh okra
2 large potatoes
1 medium onion, finely chopped
1/2 cup cornmeal
1 teaspoon salt
1/4 teaspoon ground pepper
1/4-1/2 cup bacon drippings (or you can use vegetable oil, but it won't taste as good!)

Steps:

  • Wash okra and cut off stem ends. Cut in about ½-inch pieces. Peel potatoes and chop into ½-inch dice. Put okra and potatoes in large bowl. Add chopped onion to mixture. Sprinkle cornmeal, salt and pepper over mixture. Stir until cornmeal is evenly distributed throughout mixture.
  • Heat drippings or oil in large skillet over medium heat (oil should be hot, but not smoking hot). Carefully spoon okra/potato mixture into hot oil. Fry, turning mixture occasionally, until potatoes are done and mixture is nicely browned, about 10 to 12 minutes. Drain on paper towels. Makes enough for 4 or 5 hungry people.

2 -3 tablespoons all-purpose flour
1 1/2 cups yellow plain cornmeal (stoneground is best)
1 egg, beaten
1 teaspoon salt
1/2 teaspoon pepper
lard or vegetable oil

  • Wash okra and cut into 1/2 inch rounds.
  • Put in a mixing bowl and sprinkle with flour. Shake it around vigorously to coat evenly, then bounce in a wire strainer to remove all excess. Final coat should be very light!
  • Return to mixing bowl and add beaten egg. Stir to cover each piece of okra.
  • Place cornmeal in zipper bag with salt and pepper.
  • Add okra in 1 cup batches and shake until each piece is coated. Remove with something that will allow extra cornmeal to fall away. Put on a plate until all okra is coated.

  • Slightly beat egg with fork in medium-sized bowl.
  • Pour okra into bowl and mix until coated well with egg.
  • Add flour and mix well.
  • Preheat skillet on medium-high until hot then add enough oil to coat bottom of pan.

Using Rice Bran oil makes a very light deep fry. RB Oil has a high smoke temperature and can be reused up to 10 times. It is also loaded with nutrition compared to other fry oils. (It's considered a nutraceutical. I discovered it via Google.) Prep and Cooking time will vary. I have a small electric deep fryer so it took awhile to cook all the batches. I only added 6 string beans at a time. Same with the Okra. Otherwise, the vegetables will drift and stick together.

1 cup all-purpose flour

  • Preheat Rice Bran oil or other high temperature oil to 375 degrees F.
  • Whisk the beer, flour, salt and pepper until smooth.
  • Let mixture sit for a little bit (can be made ahead).
  • Trim green bean ends and/or caps off okra (If using okra use only smaller young pods).
  • Dip green beans and/or okra into the batter to coat, letting excess drip off. (I use a strainer).
  • Fry in the oil in batches, until they are golden and crisp.
  • Remove from oil with a strainer to a paper towel lined plate or cookie sheet.
  • Sprinkle with salt and pepper. I use fresh ground pepper and fresh ground coarse salt.
  • After finding I had extra batter left over, I added cinnamon and raw cane sugar to the batter and split some regular eating bananas -- battered them up and fried them too. Added drizzle of honey and scoop of vanilla ice cream -- and Viola! Tasty dessert with no hint of the aforementioned green beans nor okra.

1-2 small squash, diced to 1/2 inch
12-17 pieces of small okra, sliced
2 small new potatoes, red or white, diced to 1/2 inch (optional) it's great with or without the potatoes.
1/2 c onion chopped to about 1/2 inch pieces
1-2 fresh jalapeno peppers, chopped (optional)
3 handfuls of all purpose flour, add more after mixing in meal and spices if needed to cover the vegetables.
2 Tbsp corn meal
1/4 tsp garlic powder
salt and pepper to taste
TO BAKE
pam
aluminum foil

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. Be sure to use the freshest ingredients. Add each chopped vegetable ingredient into bowl for mixing.
  • 3. Salt, garlic powder, and pepper vegetables and stir. Throw in flour on top of vegetables, then corn meal.
  • 4. If the vegetables aren't sufficiently covered upon stirring, you may add more flour one tablespoon at a time until it's all covered.
  • 5. Place aluminum foil, shiny side up, in a sheet pan. Spray with Pam cooking spray. Remove vegetable mixture from bowl with hands and spread onto the foil in a thin layer. If there is any loose flour in the bowl, dump it into the trash instead of onto the pan.
  • 6. Spray the top of the breaded vegetables with Pam.
  • 7. Place into the preheated oven and bake at 400 degrees for 25-30 minutes or until brown. I stir them around about 10 minutes before they finish cooking to crispen them up better on all sides.
  • 8. Remove from oven and serve immediately. This is good fried on the stove top also, but if you are like my family, you may be cutting back on fried foods. This is a good way to eat nice comfort foods without consuming large amounts of unhealthy fats.

1/2 cup heavy cream
1/4 cup water
1/4 pound okra, rinsed well and patted dry
cornmeal seasoned with salt and pepper for coating the okra

Steps:

  • In a heavy saucepan cook the onion in the butter and 1 tablespoon of the oil over moderate heat, stirring occasionally, until it is golden, add the corn, the tomato, the cream, and the water, and cook the mixture, covered, over moderately low heat, stirring occasionally, for 20 minutes. Season the corn mixture with salt and pepper and keep the mixture warm, covered.
  • Cut the okra into 1/4-inch-thick slices, in a bowl toss it with the seasoned cornmeal, and shake it in a coarse sieve to know off the excess cornmeal. In a deep skillet heat 1/2 inch of the additional oil over moderately high heat until it is hot but not smoking and in it fry the okra in batches for 1 to 2 minutes, or until it is golden, transferring it with a slotted spoon as it is fried to paper towels to drain. Serve the corn mixture topped with the fried okra.

⅓ cup chopped tomato
2 tablespoons chopped green onion
2 tablespoons chopped green bell pepper
½ cup vegetable oil

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels.

1 egg
1/2 cup grated parmesan cheese
salt and pepper

  • Clean and slice okra, and sprinkle with salt and pepper.
  • Beat egg in a shallow bowl.
  • Place grated Parmesan cheese in a shallow bowl.

2 Tbsp cooking oil of choice (i use canola)
2-3 small yellow crook neck squash, cubed
1 lb frozen or fresh unbreaded okra, sliced in 1/2" pieces
1 small sweet yellow onion, diced
2 c russet potatoes, peeled & cubed
1 c yellow corn meal
1/2 c all purpose flour
salt and pepper to taste

  • 1. Prepare veggies and place in a large bowl. Add the rest of the ingredients and mix well, coating veggies well.
  • 2. In dutch oven or extra large deep skillet, heat oil on med-hi till shimmery. Add veggies and allow to brown. Turn them as they brown. After browned, continue to cook on medium to med-lo until veggies are tender.

This is another recipe I grew up with. This is passed down from word of mouth, no one has ever written it down before! Fresh, fried okra is soo simple to fix and soo good!

Number Of Ingredients 6

1 lb fresh okra, cut into pieces (don't use the top of the stem but the bottom is wonderful to eat)
2 -3 cups cornmeal
1 egg
2 cups buttermilk (regular or lowfat milk is fine, too)
salt and pepper
oil

Steps:

  • In a big bowl beat egg with a fork, pour milk in and combine. Pour the cornmeal in another big bowl.
  • Pour enough oil in a big skillet, halfway up, or you can use a deep fryer. Set heat to Medium-high.
  • Put some okra pieces in milk mixture and then coat in cornmeal batter. Fry in skillet 10-15 min, occasionally turning/stirring them around. They are done when crispy and golden brown but not black!
  • Drain on paper towel lined plate. Sprinkle with salt and pepper (i don't use pepper but some people prefer it).
  • Repeat with rest of okra till all gone. Enjoy!

A great crispy fried okra salad. Good for taking to a pot-luck dinner or as a great side dish for a homecooked meal!

1 pound bacon
1 (24 ounce) bag frozen breaded okra
3 large tomatoes, diced
1 red onion, diced
1 pinch garlic salt to taste
salt and ground black pepper to taste

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; crumble into a large bowl.
  • Heat 1/2 inch of vegetable oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Fry okra in the hot oil, turning often, until golden brown, 3 to 4 minutes. Drain on paper towels. Add to bacon in the bowl.
  • Toss tomatoes, red onion, garlic salt, salt, and pepper together in a separate bowl. Stir into the bacon and okra mixture.
