Fried Mushrooms image

I made these for our Labor Day get together and they were a hit.

10 oz cremini mushrooms
2 c panko bread crumbs
1 c flour
1/2 c corn starch
3/4 tsp baking powder
1 Tbsp grated parmesan
1/2 tsp garlic powder
1/8 tsp cayenne pepper
1/2 tsp italian seasoning
1/4 tsp pepper
1/2 tsp thyme
dash salt
1 c buttermilk
vegetable oil

Steps:

  • 1. Wash mushrooms and dry completely.
  • 2. In a bowl, mix flour, corn starch, baking powder and all seasonings. Be sure they are mixed well.
  • 3. Add the buttermilk. Mix to form a batter.
  • 4. Place the bread crumbs in a shallow dish.
  • 5. Dip the mushrooms in the batter. Let the excess drip off.
  • 6. Roll the battered mushrooms in the bread crumbs to coat.
  • 7. Heat one inch of oil in a skillet over medium heat.
  • 8. Carefully add the mushrooms to the oil using tongs. Don't crowd the mushrooms. (You may need to cook in batches.)
  • 9. Fry, turning occasionally, for 7 to 10 minutes or until they are golden brown.
  • 10. Gently remove from the oil and drain on a paper towel lined plate. Allow to cool for 2 to 5 minutes.
  • 11. Serve with dipping sauce or ranch dressing.
