Fried Cabbage with Sausage image

This is such a fast and easy dish to make for dinner, especially if I've been gone all afternoon. And it is very filling and pretty healthy, especially with the organic coconut oil. I make this often, nearly every week. When we've traveled to visit family & I've made this, everyone loves it & wants the this easy recipe!

Number Of Ingredients 7

1/2 cup(s) or 1/3 cup if desired coconut oil or 1 stick butter
1 bag(s) very large (32 oz)or 2 small bags slaw mix (14-16 oz each)
1 pound(s) smoked sausage, sliced into round pieces
1 can(s) 15 ounce diced tomatoes or rotel tomatoes (my favorite)
1/2 teaspoon(s) salt
1/2 teaspoon(s) pepper
1 medium onion, chopped

Steps:

  • Melt coconut oil OR butter in large skillet. Add cabbage, onion, and cook on medium high for about 5 minutes, stirring to keep from sticking to pan.
  • Add remaining ingredients, cover and simmer for 20-25 minutes. I stir mine every 10 minutes or so but it is not necessary.
  • We love this and usually eat it all between the 2 of us, but it could be up to 8 servings as a side dish. Only 4 g net carbs per serving.
