I got this recipe from The Ayurvedic Cookbook. It's a very simple salad. I think this would be good mixed with some coconut (or other flavored) yogurt.

Steps:
- 1. Use a sweet ripe pineapple for this recipe. Peel and core it. Cut into 1" cubes.
- 2. Mix the rest of the ingredients and if you like add some coconut yogurt to it, I think it really would add here. This can be stored in the fridge for 6-8 hours.
- 3. Enjoy!
