Fresh Mozzarella and Fruit Salad image

Mild mozzarella cheese and assorted fruit are drizzled with a lemon yogurt, mint and ginger dressing in this refreshing salad.

3 containers (6 oz. each) lemon low-fat yogurt
1 Tbsp. chopped fresh mint
dash ground ginger
1/2 lb. POLLY-O Fresh Mozzarella, Ciliegine, drained
8 cups assorted fruit (honeydew melon balls, cantaloupe balls, watermelon balls, seedless red and green grapes)

Steps:

  • Mix yogurt, mint and ginger until well blended; cover.
  • Refrigerate 1 hour or until chilled.
  • Arrange fruit and cheese on serving plate. Drizzle with the yogurt mixture just before serving.
