FRESH APPLE POUND CAKE image

2 c. sugar
4 eggs
1 tsp. baking soda
1/2 tsp. vanilla extract
1/2 tsp. rum extract
1 c. chopped pecans
1-1/2 c. cooking oil
3 c. plain flour
1 tsp. salt
3 c. diced Granny Smith apples
1 c. coconut

Steps:

  • Mix sugar and oil. Add eggs one at a time, beating after each. Sift soda, salt and flour. Add to egg mixture and beat well. Add apples, nuts, coconut and flavorings. Bake in greased and floured tube pan for 1 hour and 20 minutes. DO NOT OPEN OVEN DOOR!
