Bunch of various small potatoes (red, white), unpeeled
Medium yellow onions sliced (2)
Thyme
Beef broth (4 cups)
Butter (2 tbsp)
Salt and pepper

Steps:

  • - Preheat oven to 300 degrees - Sautee sliced onions in butter until golden, seasoning with salt, pepper, and thyme - Add one layer of onions to baking dish - Add one layer of potatoes, season the layer - Repeat onion and potato layers two more times - Add beef broth until liquid is near top of potatoes - Bake 2-3 hours until all liquid is dissolved
