Fran's Sherry Cake image

This cake is loaded with sherry! It's always a hit and so easy to make. I also make it with a scratch cake recipe but have developed this quick and easy version which is just as good!

CAKE:
1 box yellow cake mix
1 box vanilla instant pudding mix, 6-oz.
3/4 c canola oil
3/4 c cream sherry
4 large eggs
1/4 tsp nutmeg
1/2 tsp cinnamon
WHILE COOLING:
1/4 c powdered sugar
1/2 c cream sherry
GLAZE
2 c powdered sugar
2 Tbsp cream sherry

Steps:

  • 1. Preheat oven to 350°F.
  • 2. Mix all ingredients except the powdered sugar on medium speed for 5 minutes. Mixture will be thick.
  • 3. Pour into well greased bundt pan and bake at 350°F for 45 minutes.
  • 4. While cooling mix 1/4 cup powdered sugar and 1/2 cup sherry. Poke holes in cake with a fork and drizzle while still in pan.
  • 5. Turn out pan onto cooling rack. Mix glaze ingredients and pour over cake while still warm.
