FRANK'S BIG CHOCOLATE CHIP COOKIE'S image

1 cup shortening
1/2 cup butter
1 1/3 cups of white sugar
1 cup brown sugar
4 eggs
1 Tablespoon vanilla
1 teaspoon lemon juice
2 teaspoons baking soda
1 1/2 teaspoons salt
1/2 cup quick oats
3 cups flour
24 Ounces semi-sweet chocolate chips
1 1/4 cups pecan, chopped
1 1/2 cups coconut, flaked

Steps:

Beat shortening, butter, sugar and brown sugar until creamy. Add eggs, vanilla and lemon juice, beat well. 2. In seperate bowl, combine flour, oats, baking soda and salt. Add flour mixture gradually to creamed mixture. Beat well. Stir in pecans, coconut and chocolate chips. 3. On greased cookie sheet, drop a scant 1/4 cup of dough for each cookie. Bake at 350* for approximately 18 minutes. Do not overbake.. Makes 36 ( 4 inch ) cookies. Serve with my special verse, 4.
