FLUFFY BAKED POTATOES image

Number Of Ingredients 12

6 Baking Potatoes
2 T. Butter
1/2 Cup Hot Milk
1 Tsp. Salt
1/4 Tsp. Pepper
1 Tsp. Baking Powder
Just a Pinch - Nutmeg
2 Egg Yolks (Place in Separate Bowls)
2 Egg Whites
1/2 Cup Swiss Cheese, finely grated
2 T. Onions - grated - optinoal
1 T. Water

Steps:

  • Preheat over to 425 F. Prick and bake potatoes for 1 hour. Cut thin slice from top half of each potato and discard. Scoop potato pulp into bowl with teaspoon, being caregul not to break skin. Mash pulp well (use beater). Add butter, milk, salt, pepper, baking powder, nutmeg and one egg yolk and onion. Whip until fluffy. Beat egg whites until stiff and old into mixture. Mix in cheese and pile back into potato skins. Beat remaining egg yolk with water. Brush over each potato. Set in pan and bake 15 minutes at 400 F.
