FLAN CLÁSICO CON COGNAC (SA TABLE) image

4 cups milk
1½ t pure vanilla extract
2 strips orange zest
2 strips lemon zest
1 two-inch long cinnamon stick
5 large eggs
5 large egg yolks
¾ cup sugar
2 tablespoon cognac or brandy

Steps:

  • caramelize pan preheat oven to 325º in a medium size, heavy saucepan, bring the milk to a simmer (just below the boiling point). Add zests, and cinammon. let steep for 20 minutes at temperature below a simmer in a large mixing bowl, beat together the eggs, egg yolks, and sugar until well mixed. add the hot milk in a stream, beating all the time with a wire wisk. add the cognac and vanilla extract. Remove any froth that forms on the surface. strain the mixture through a medium mesh sieve into the prepared caramel mold. set the mold in a roasting pan in a baño maria. cover with a piece of aluminum foil over the top. bake in the lower third of the oven until a a knife inserted in the center comes out clean, about 45 min.
