Five Star Super Omelet image

Omelet's are a popular breakfast and brunch food. However, an omelet can be eaten for any meal including dinner. I came up with a mouth watering omelet that can be eaten at any meal. I thin your entire family will enjoy it.

9 eggs
2 large baking potatoes, diced
1 large diced orange bell pepper
1 Spanish onion, diced
1 teaspoon kosher salt
1 teaspoon black pepper
7 lbs smoked ham (diced)
1 cup mild cheddar cheese
1 cup light cream
1 cup of fresh sliced onion
2 -3 tablespoons butter

Steps:

  • Combine 9 eggs, cream, salt and pepper in a large mixing bowl, combine cream & eggs together by using a fork or whisk.
  • Take diced potatoes, place in saucepan, cover with warm water and boil for approximately 8 minutes or until tender.
  • Next, once potatoes are tender, drain excess water, place in fry pan with 4 tablespoons of butter, cook for about 10 minutes or until browned.
  • Take egg mixture and slowly add all remaining ingredients including peppers, mushrooms, cheese ham, add potatoes last.
  • Pour egg mixture into a large casserole or baking dish. Place into a per-heated 400 degree oven for approximately 18-20 minutes. You can check too see if omelet is cooked by poking with toothpick or knife.
  • You may sprinkle additional cheese over top of omelet.
  • Allow to cool for about 5 minutes and serve.
