FISH BRINE image

Yield 1 batch of trout

Number Of Ingredients 6

1 gallon water
2 cups salt
1/4 lb. brown sugar
1/2 c lemon juice
1/2 Tb liquid garlic
1/2 Tb liquid onion

Steps:

  • Leave filleted fish in brine for 2 hrs.;less if using small fish fillets. Rinse briefly. Air-dry the fish on racks for 2-3 hrs. Smoke as you usually do.
