Coconut Ice Cream image

When I want something cold & sweet but don't wanna drive to the store. I make this. Might take some time, but is so worth it on a hot day.

Number Of Ingredients 5

3 c milk, low-fat
3/4 c sugar
1/4 tsp salt
1/2 tsp vanilla extract
1 c coconut, shredded

Steps:

  • 1. In medium bowl combine everything & mix well until sugar has fully dissolved. Pour into pan or freezing trays. Freeze until almost firm. Place mixture into a chilled bowl & beat thoroughly. Returning back to pan or tray & continue to freeze. Re-beat 2 times more during the freezing process.
