Fig Jam image

I love jams, especially fig jam. This is a lovely alternative to the orange fig jam I usually enjoy. I hope that you will enjoy this quick and easy to make treat.

Number Of Ingredients 7

3 large fresh figs, cleaned, ends removed, coarsley chopped
1 cup honey, wildflower or your favorite
1 small lemon, juiced, zest thinly sliced
1/4 cup blanched almonds, coarsely chopped
1 tsp fresh ground cinnamon
1 pinch sea salt
1 vanilla bean, scraped for seeds

Steps:

  • 1. Into a large pot add the figs, honey, lemon juice, lemon zest, ground cinnamon, salt and vanilla bean seeds: bring to a boil.
  • 2. Reduce the heat and simmer 1 hour, stir frequently while simmering.
  • 3. When the jam has thickened add in the nuts and continue to simmer for 10 - 20 minutes longer.
  • 4. Once the marmalade has cooled pour into a sterilized jar.
