Fiesta Casserole image

This recipe is really good. It can be made into 2 smaller casseroles bake 1 and freeze 1 for later. To bake a frozen casserole, thaw first. Other meats can be substituted for the ground beef. Try shredded chicken. Yum!

Number Of Ingredients 16

1 lb lean ground beef
1 medium sweet onion , chopped
1 1/2 tsp chopped garlic
1/2 tsp salt
italian seasoning, to taste
taco seasoning, to taste
1 can(s) enchilada sauce
1 c salsa
6-8 oz fresh baby spinach
1 can(s) black beans, rinsed and drained
1 small can niblets corn, drained
8 oz cream cheese
1 c sour cream
1 c chopped olives (whatever kind you like)
2 c crushed frito corn chips
2 c shredded mexican cheese

Steps:

  • 1. In a skillet, over medium heat, brown the first 6 ingredients.
  • 2. Drain off the fat if necessary. Add salsa, black beans, enchilada sauce, corn, & spinach.
  • 3. Add cream cheese, sour cream, & olives. Cook for 5 minutes.
  • 4. Layer 1 cup of crushed fritos, 1/2 of the meat mixture, 3/4 cup cheese, 1 cup crushed fritos, the rest of the meat mixture, & the remainder of the cheese into a 9 x 13 casserole dish.
  • 5. Bake at 350 degrees for 30 minutes.
