Feta Cheese Dip image

I got this a while ago from a grilling book. The only thing I do different is where it calls for salt, I use garlic salt.

Number Of Ingredients 16

DIP:
1 cup(s) sour cream
1/4 cup(s) crumbled feta cheese
2 clove(s) garlic, pressed
1 tablespoon(s) red wine vinegar
2 tablespoon(s) fresh parsley, minced
- ground black pepper (to taste)
VEGETABLES: (TO BE GRILLED)
1 - red pepper, cut in 1 inch squares
1 - green pepper, cut in 1 inch squares
2 - onions, cut in 1 inch cubes
18 - cherry tomatoes
18 - button mushrooms
1 - zucchini, cut in 1 inch cubes
- salt and pepper to taste
2 teaspoon(s) dried thyme leaves

Steps:

  • DIP:
  • Mix all of the ingredients for the dip in a bowl. Set in the fridge and let chill until needed.
  • VEGETABLES:
  • Heat the grill (about 10-15 min.)
  • While the grill is heating up, put all of the vegetables onto skewer, alternating the veggies. (If you are using wooden skewers, be sure to soak them before grilling.)
  • Brush the veggies with some olive oil and add the salt and pepper.
  • Grill the vegetables on medium heat until done, turning the skewers as needed.
  • Serve the grilled vegetables straight from the grill with the Feta Cheese Dip and enjoy!
