Feta and sundried tomato stuffed chicken image

An elegant, but easy to make chicken dinner. I just serve w/ a lg salad mixed with feta, sundried toamtoes, cukes and a balsamic vinegar.

Number Of Ingredients 7

1 tablespoon(s) dried tomatoes, snipped
4 - boneless, skinless chicken breasts
1/4 cup(s) crumbled feta cheese, i used reduced-fat
2 tablespoon(s) reduced-fat cream cheese, softened
1/2 teaspoon(s) dried basil
1/8 teaspoon(s) pepper
1 teaspoon(s) olive oil

Steps:

  • Pour toamtoes in small bowl, cover w/ boiling water for 10 mins. Drain. Cut a pocket, ( not all the way through,) in each chicken breast.
  • In bowl, combine feta cheese, cream cheese, dried basil and tomatoes. Spoon 1 rounded tbsp of mix into each pocket of each chicken.
  • Secure w/ toothpicks. In lg skillet, heat oil over med-high heat. Cook chicken about 12-14 mins, turning once.
