Ferah's Lavash Pizzas image

This is a great light meal or snack that can be made with minimum effort. You can also use flat pita bread or focaccias to make other types of delicious pizzas with just a little imagination. Serve with garlic yogurt and a Mediterranean salad.

4 sheets lavash bread
2 tablespoons tomato paste
1 (4 ounce) package thinly sliced salami
12 cherry tomatoes, quartered
1 small red onion, diced
⅓ cup sliced black olives
1 ¾ cups shredded mozzarella cheese

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line 2 baking sheets with aluminum foil.
  • Place 2 sheets of lavash on each baking sheet. Spread 1 1/2 teaspoon tomato paste over each sheet of lavash. Lay about 6 slices of salami over the tomato paste. Scatter cherry tomatoes, red onion, and black olives on top. Cover with mozzarella cheese.
  • Broil lavash in batches in the preheated oven until cheese is melted, 3 to 5 minutes.
