Fava Bean Soup image

I got the idea of this soup from a gorgeous stew in Saveur, but I wanted something smoother and quicker so I adapted it to use hulled fava beans a pressure cooker.

Number Of Ingredients 9

1 cup dried fava beans (hulled)
1 tablespoon olive oil
6 garlic cloves
5 sprigs fresh thyme
2 bay leaves
1 large yellow onion (minced)
4 cups water
1 teaspoon salt (or more to taste)
1/2 lemon, juice of

Steps:

  • saute onions.
  • add everything (except lemon) to a pressure cooker.
  • cook 30 minutes.
  • adjust water to taste.
  • add 1/2 lemon (juiced).
