Faux Peanut Sauce image

My wife helped me come up with this variation, as her diet forbids peanut butter and certain types of oils. We serve it warm over noodles, vegetables, chicken, or pork.

2 tablespoons sesame oil
½ cup sliced green onion
3 tablespoons sesame seeds
2 cloves garlic, crushed
½ teaspoon red pepper flakes
1 cup chicken broth
¼ cup tamari sauce
3 tablespoons rice wine vinegar
2 tablespoons white sugar
1 tablespoon curry powder
½ cup salted almond butter

Steps:

  • Heat sesame oil in a saucepan over medium heat. Cook and stir green onions, sesame seeds, garlic, and red pepper flakes in hot oil until fragrant and onions start to soften, 2 to 3 minutes. Stir chicken broth, tamari sauce, vinegar, sugar, and curry powder into onion mixture; bring to a simmer. Whisk in almond butter and stir until thickened, about 5 minutes.
