Steps:
- Gently heat oil, and add garlic. When oil starts to bubble, add flour to make roux. Stir, over medium heat, until mixture turns a light beige colour. Add spinach and nutmeg, continue stirring, then add enough milk just to cover spinach. Continue stirring until bubbles begin to break the surface. Continue to cook until desired consistency is reached.
