Farmhouse Roasted Potatoes image

This recipe was part of a contest for Potatoes USA developed and cooked by Carol Miller, Brian Weld, and Kelly Goralski. Rustic potatoes with a new world twist!

2 tablespoons olive oil
1 tablespoon garlic powder
1 tablespoon dried parsley
½ teaspoon salt
1 pound petite potatoes
1 pound bacon, cut into 1-inch pieces
1 onion, sliced
1 cup freshly grated Parmesan cheese
½ lemon, zested

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Mix olive oil, garlic powder, parsley, and salt together in a large bowl; add potatoes and stir until coated. Mix bacon and onion into potato mixture. Spread potato mixture onto a baking sheet.
  • Roast in the preheated oven until potatoes are tender and crisp, about 30 minutes. Toss potatoes with Parmesan cheese and top with lemon zest.
