FARMER'S OVEN BAKED OMELET image

Number Of Ingredients 11

12 Large eggs
1/2 cup sour cream
2 T. chopped thyme
1 t. salt
3/4 t. freshly ground pepper
1/4 t. baking powder
2 T butter or margarine
6 small plum tomatoes, seeded and chopped (canned is fine)
8 oz. farmer cheese, or whatever, shredded
1/2 cup chopped fresh basil
garnish fresh basil leaves

Steps:

  • Beat first six ingrediants at medium speed with an electric mixer 2 or 3 minutes or until well blended Melt butter in 12 inch over proof skillet; add egg mixture Bake at 350 degrees for 15 minutes. Remove from oven; sprinkle with tomotoes, cheese, and basil Return to oven and bake 15-20 more minutes, or until set garnish, if desired; serve immediately.
