Steps:
- 1. In a large 2-quart pot, heat 1 TB oil on medium heat. 2. Add onion and bell pepper, stirring 5 minutes. 3. Add garlic and ginger, stirring until garlic is light brown 4. Add remaining 1 TB oil. 5. Stir in curry powder 6. Add black pepper 7. Put chicken breast, sauté until done 8. Add butternut squash 9. Pour in crushed tomatoes 10. Turn heat to high and bring to a boil 11. Add sugar, stir 12. Add greens (optional) 13. Turn heat to low and simmer for 20-30 minutes Serve over rice and/or pita bread.
