FANCY BRUSSEL SPROUTS image

8 ounces bacon, chopped
1 cup thinly sliced shallots
1 1/2 lb brussel sprouts
3 sprigs fresh thyme or tsp dried
1/2 cup slivered almonds
1/2 cup dried currants or raisins
1/2 cup white wine

Steps:

  • Cook bacon and shallots in a large saute pan over medium heat until bacon is crispy and shallots are brown. Drain off most but not all of the grease. Add sprouts and turn up the heat, cook until sprouts have started to brown. Add remaining ingredients and cover. Cook over medium-low heat 30 minutes, until sprouts are tender. Remove lid and turn up the heat and cook, stirring often, until any remianing liquid has boiled off.
