- Preheat the oven to 350°F and spread out bagel cubes in an even layer. Melt 1 tablespoon of the butter and then pour it over the bagel cubes. Toast the bagel cubes in the oven, tossing occasionally, for about 15-20 minutes, or until they are golden and crunchy. Remove from oven and allow to cool. Transfer to a large baking dish.
- Meanwhile, crisp the bacon in a skillet. Remove from pan and add to the bagel cubes in the baking dish, reserving ¼ cup for the topping. To the drippings, add the remaining tablespoon of butter, onion, and thyme. Cook over medium heat until the onion is soft and translucent. Allow to cool and then add to the bagel cubes to the baking dish, distributing evenly.
- Whisk together the half-and-half, eggs, and a half of the grated cheeses. Pour the mixture over the bagel cubes and onion and press everything down slightly to ensure that it is all evenly submerged in the liquid. Cover with plastic wrap and refrigerate for at least 1 hour or overnight.
- Mix together the ingredients for the "everything bagel" spice mixture.
- When ready to bake, heat the oven to 350°F. Remove the strata from the fridge and top with the remaining grated cheeses, crisped bacon, and a couple tablespoons of the "everything bagel" spice mixture. Bake for 50-60 minutes, or until the custard is set and the top is golden brown. Allow to cool slightly before serving.
