1 Lb lean ground beef or turkey
2 cans of pilsbury refrigerated biscuits
1 can of black beans
1 can enchilada sauce
1 C Mexican cheese blend

Steps:

  • Heat oven to 350, spray 13 X 9 inch glass pan or baking dish with Pam. In 10 inch skillet, cook beef for 5-7 min on medium-high heat, stir occasionally until not pink. Drain if necessary. Meanwhile deprecate the biscuits into 10. With pizza cutter cut biscuits into quarters. In large bowl stir beef, enchilada, and tomato sauce. Stir in biscuit pieces, spread mixture evenly in dish. Sprinkle cheese over top, cook 25-30 min. Add dollop of sour cream on top if desired.
