ELLEN'S EASY CHICKEN AND RICE image

I can't believe I haven't posted this recipe before now. It's one of the easiest and most trusted fall-back recipes I have. I think it also qualifies as a great comfort food. 06-11-14

Number Of Ingredients 6

2 - chicken breasts, boneless and skinless
2 tablespoon(s) cooking oil
1 can(s) (10.75 oz.) cream of chicken soup
1 package(s) boil-in-bag white or brown rice
2 can(s) (soup cans) milk
- salt and pepper to taste

Steps:

  • Place cooking oil in a large skillet. Add chicken breasts and brown on both sides. Season with salt and pepper as desired. Drain.
  • In a medium-sized bowl, combine the soup and milk. Stir to blend. Pour over chicken and add rice. Bring to a boil and reduce heat. Cook, covered, for 30 minutes or until chicken is tender.
  • The soup and milk will form a nice gravy to spoon over the chicken and rice. Enjoy!
