ELLEN'S APRICOT CHICKEN image

Number Of Ingredients 6

2 cut-up chickens
1/4 cup of oil (I often use about 3 tbs)
1 bottle Russian Dressing
1 envelope Onion Soup mix
1 jar (10 oz) Apricot preserves (can use peach too)
1 Tsp salt

Steps:

  • Mix sauce in bowl. Layer chicken in foil lined pan, skin side up. Pour sauce over. Bake at 350 with foil for 45 minutes, then bake without foil for 15 minutes at low 425 and low broil for 5. Put rice or cous cous in bottom of pan if you want to make it a one-dish meal. Bake at 350 for 1 hour. Note: For extra flavor, prepare and marinate overnight before baking.
