Eliane's (My Mom) Carrot Kugel image

A fabulous carrot kugel - everyone who tries it loves it! You can easily make it ahead and reheat, or even freeze.

Number Of Ingredients 9

2 cups carrots, grated
1/3 cup oil
1/2 cup brown sugar
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon lemon juice
2 large eggs

Steps:

  • Preheat oven to 350°F.
  • Grease a 9" pie dish.
  • Beat eggs together in a large bowl.
  • Add all other ingredients and mix together.
  • Bake for approx 45 or until a knife comes out clean.
