Steps:
- 1. In a large bowl, combine all ingredients except the spinach. Transfer into a greased 15x10x1-inch baking pan.
- 2. Bake, uncovered, in a preheated 425-degree oven for 25 minutes, stirring once halfway through. After 25 minutes, add the spinach. Bake an additional 15 to 20 minutes or until potatoes are tender, stirring once.
